Ingredients
- 2 kg (4.4 lbs) Maris Piper or Yukon Gold potatoes
- 100 g (3.5 oz) duck fat or olive oil
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons fresh rosemary, chopped
- 2 cloves garlic, crushed
Instructions
- Preheat your oven to 200°C (400°F).
- Peel the potatoes and cut them into evenly sized chunks.
- Boil the potatoes in a large pot of salted water for 10 minutes until they are just tender.
- Drain the potatoes and let them steam dry for a few minutes.
- Heat the duck fat or olive oil in a large roasting pan in the oven for 5 minutes.
- Add the potatoes to the hot fat, turning them to coat evenly.
