Ingredients
- 4 pounds ripe peaches
- 2 cups white vinegar
- 1 cup water
- 2 cups granulated sugar
- 1 tablespoon whole cloves
- 1 tablespoon whole allspice
- 4 cinnamon sticks
- 1 teaspoon salt
Instructions
- Prepare the peaches by washing them thoroughly. Cut each peach in half and remove the pit. If desired, peel the peaches for a smoother texture.
- Combine vinegar, water, sugar, cloves, allspice, cinnamon sticks, and salt in a large saucepan. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves.
- Add the peach halves to the boiling liquid. Reduce the heat and simmer for about 5 minutes, or until the peaches are just tender.
- Transfer the peaches into sterilized pint-sized jars, ensuring each jar gets an even distribution of spices.
- Pour the hot pickling liquid over the peaches in the jars, leaving about 1/2 inch of headspace at the top. Seal the jars with lids.
- Cool the jars at room temperature for about 1 hour. Once cooled, store them in the refrigerator. Allow the peaches to pickle for at least 24 hours before serving for the best flavor.
Additional Notes
For a spicier kick, add a few slices of fresh ginger to the pickling liquid. You can also experiment with different types of vinegar, such as apple cider vinegar, for a unique flavor profile.
