Ingredients
- 1 large red onion, thinly sliced
- 1 cup apple cider vinegar
- 1 cup water
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 teaspoon black peppercorns
- 1 clove garlic, peeled and smashed
- Optional: 1 small jalapeño, sliced
Instructions
- Prepare the onion by peeling and slicing it thinly. Place the slices in a heatproof bowl or jar.
- Combine the apple cider vinegar, water, sugar, and salt in a small saucepan. Add the black peppercorns and garlic.
- Heat the mixture over medium heat, stirring occasionally, until the sugar and salt have dissolved. This should take about 5 minutes.
- Pour the hot vinegar mixture over the sliced onions, ensuring they are fully submerged. Add the jalapeño slices if using.
- Let the onions cool to room temperature, about 30 minutes. They will turn a beautiful pink color as they pickle.
- Store the pickled onions in the refrigerator in a sealed container. They will keep for up to 2 weeks.
Additional Notes
For a sweeter pickle, increase the sugar to 2 tablespoons. You can also experiment with adding spices like cumin seeds or coriander seeds for additional flavor.
