Ingredients
- 1 sheet of puff pastry, thawed
- 1 cup vegan mozzarella, shredded
- 2 large red onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the onion relish by heating olive oil in a pan over medium heat. Add the sliced onions and cook until they are soft and translucent, about 10 minutes.
- Add balsamic vinegar and brown sugar to the onions. Stir well and cook for another 5 minutes until the mixture is caramelized. Season with salt and pepper. Set aside.
- Roll out the puff pastry on a lightly floured surface and cut it into 12 equal squares.
- Place the pastry squares on the prepared baking sheet. Top each square with a spoonful of onion relish and a sprinkle of vegan mozzarella.
- Bake in the preheated oven for 15 minutes or until the pastry is golden and the cheese is melted.
- Garnish with fresh basil leaves before serving.
Additional Notes
For a gluten-free version, use gluten-free puff pastry. You can also experiment with different types of vegan cheese or add toppings like sun-dried tomatoes or olives for extra flavor.
