Plum and Vanilla Jam

Ingredients
- 2 pounds ripe plums, pitted and chopped
- 2 cups granulated sugar
- 1 vanilla bean, split and seeds scraped
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
Instructions
- Prepare the plums by washing, pitting, and chopping them into small pieces.
- Combine the chopped plums, sugar, vanilla bean and seeds, lemon juice, and salt in a large saucepan.
- Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the plums start to release their juices.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 45 minutes, stirring frequently, until the jam thickens.
- Test the jam’s consistency by placing a small spoonful on a chilled plate. If it wrinkles when pushed with a finger, it’s ready. If not, continue cooking and test again after a few minutes.
- Remove the vanilla bean pod from the jam.
- Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Seal immediately with lids.
- Cool the jars at room temperature. Once cooled, store in the refrigerator for up to 3 weeks or process in a water bath for longer storage.
Additional Notes
For a smoother texture, you can blend the jam with an immersion blender before pouring it into jars. If you prefer a stronger vanilla flavor, add a teaspoon of vanilla extract after removing the jam from heat.
