Ingredients

  • 2 pieces of pita bread
  • 1 cup pomegranate seeds
  • 1 large cucumber, diced
  • 2 large tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon pomegranate molasses
  • 1 teaspoon sumac
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the pita bread into small triangles and place them on a baking sheet.
  3. Bake the pita triangles for about 5 minutes or until they are golden and crispy. Remove from the oven and let them cool.
  4. Combine the cucumber, tomatoes, red onion, parsley, mint, and pomegranate seeds in a large salad bowl.
  5. Whisk together the olive oil, lemon juice, pomegranate molasses, sumac, salt, and pepper in a small bowl to make the dressing.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Add the toasted pita pieces to the salad just before serving to maintain their crunch.
