Ingredients
- 2 pieces of pita bread
- 1 cup pomegranate seeds
- 1 large cucumber, diced
- 2 large tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon pomegranate molasses
- 1 teaspoon sumac
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cut the pita bread into small triangles and place them on a baking sheet.
- Bake the pita triangles for about 5 minutes or until they are golden and crispy. Remove from the oven and let them cool.
- Combine the cucumber, tomatoes, red onion, parsley, mint, and pomegranate seeds in a large salad bowl.
- Whisk together the olive oil, lemon juice, pomegranate molasses, sumac, salt, and pepper in a small bowl to make the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Add the toasted pita pieces to the salad just before serving to maintain their crunch.

Additional Notes
