- 1 can (14 oz) coconut milk
- 2 cups pumpkin, peeled and cubed
- 1 cup vegetable broth
- Salt and pepper to taste

Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Mix in the curry powder, cumin, turmeric, and cayenne pepper, stirring for 1 minute to release the spices’ aroma.
- Pour in the coconut milk and vegetable broth, stirring to combine.

- Cook for 20-25 minutes, or until the pumpkin is tender.

Additional Notes
