Ingredients

  • 1 block (14 oz) firm tofu, drained and cubed
  • 2 tablespoons sesame oil, divided
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups pak choi, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Cooked rice, for serving

Instructions

  1. Prepare the tofu by pressing it to remove excess moisture. Cut into 1-inch cubes.
  2. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 8 minutes. Remove from the skillet and set aside.
  3. Add the remaining tablespoon of sesame oil to the skillet. Sauté the garlic and ginger for 1 minute until fragrant.
  4. Stir in the pak choi and cook for 3-4 minutes until wilted.
  5. Combine the soy sauce, rice vinegar, and cornstarch mixture in a small bowl. Pour over the pak choi and stir well.
  6. Return the tofu to the skillet and toss everything together. Cook for an additional 2 minutes until the sauce thickens.
  7. Sprinkle with sesame seeds before serving. Serve hot over cooked rice.

Additional Notes

For a spicier version, add a pinch of red pepper flakes or a dash of sriracha sauce. You can substitute pak choi with other greens like spinach or kale if desired.
