Ingredients
- 1 block (14 oz) firm tofu, drained and cubed
- 2 tablespoons sesame oil, divided
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups pak choi, chopped
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame seeds
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Cooked rice, for serving
Instructions
- Prepare the tofu by pressing it to remove excess moisture. Cut into 1-inch cubes.
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 8 minutes. Remove from the skillet and set aside.
- Add the remaining tablespoon of sesame oil to the skillet. Sauté the garlic and ginger for 1 minute until fragrant.
- Stir in the pak choi and cook for 3-4 minutes until wilted.
- Combine the soy sauce, rice vinegar, and cornstarch mixture in a small bowl. Pour over the pak choi and stir well.
- Return the tofu to the skillet and toss everything together. Cook for an additional 2 minutes until the sauce thickens.
- Sprinkle with sesame seeds before serving. Serve hot over cooked rice.
Additional Notes
For a spicier version, add a pinch of red pepper flakes or a dash of sriracha sauce. You can substitute pak choi with other greens like spinach or kale if desired.
