- 1 cup dried red kidney beans (rajma), soaked overnight
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves, chopped (for garnish)
Instructions
- Prepare the kidney beans by draining the soaked beans and rinsing them under cold water.
- Cook the beans in a pressure cooker with 3 cups of water and a pinch of salt. Cook for about 20 minutes or until the beans are soft. Set aside.
- Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until golden brown.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Mix in the tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
- Add the cooked kidney beans along with their cooking liquid. Stir well to combine.
- Simmer the mixture on low heat for about 15 minutes, allowing the flavors to meld together.
- Sprinkle garam masala over the rajma and mix well.
- Garnish with fresh cilantro leaves before serving.
Additional Notes
For a creamier texture, you can mash a few of the cooked beans before adding them to the masala. If you prefer a spicier dish, adjust the red chili powder to taste. Serve with steamed basmati rice or naan for a complete meal.
