Ingredients

  • 1 cup dried red kidney beans (rajma), soaked overnight
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro leaves, chopped (for garnish)

Instructions

  1. Prepare the kidney beans by draining the soaked beans and rinsing them under cold water.
  2. Cook the beans in a pressure cooker with 3 cups of water and a pinch of salt. Cook for about 20 minutes or until the beans are soft. Set aside.
  3. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onions and sauté until golden brown.
  5. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  6. Mix in the tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
  7. Add the cooked kidney beans along with their cooking liquid. Stir well to combine.
  8. Simmer the mixture on low heat for about 15 minutes, allowing the flavors to meld together.
  9. Sprinkle garam masala over the rajma and mix well.
  10. Garnish with fresh cilantro leaves before serving.

Additional Notes

For a creamier texture, you can mash a few of the cooked beans before adding them to the masala. If you prefer a spicier dish, adjust the red chili powder to taste. Serve with steamed basmati rice or naan for a complete meal.
