  • 4 tablespoons olive oil
  • 1 can (14 oz) diced tomatoes

  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Prepare the vegetables by washing and chopping them as described in the ingredients list.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the eggplant and cook for about 5 minutes until slightly browned. Remove and set aside.
