Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the halved tomatoes, quartered onion, and garlic cloves on a baking sheet.
- Drizzle with olive oil and sprinkle with salt, pepper, and dried basil.
- Roast in the oven for 30-35 minutes, until the tomatoes are soft and slightly caramelized.
- Transfer the roasted vegetables to a large pot.
- Add the vegetable broth and bring to a simmer over medium heat.
