Ingredients
- 500g runner beans, trimmed and sliced
- 500g apples, peeled, cored, and chopped
- 250g onions, finely chopped
- 250g brown sugar
- 500ml cider vinegar
- 1 tablespoon mustard seeds
- 1 tablespoon ground ginger
- 1 teaspoon salt
- 1 teaspoon ground turmeric
- 1 teaspoon chili flakes (optional)
Instructions
- Prepare the runner beans by trimming the ends and slicing them into small pieces.
- Combine the runner beans, apples, and onions in a large pot.
- Add the brown sugar, cider vinegar, mustard seeds, ground ginger, salt, turmeric, and chili flakes to the pot.
- Stir the mixture well to ensure all ingredients are evenly distributed.
- Bring the mixture to a boil over medium heat, stirring occasionally.
- Reduce the heat to low and let it simmer for about 1 hour, stirring occasionally, until the chutney thickens.
- Check the consistency; it should be thick and jam-like. If not, continue to simmer until desired consistency is reached.
- Remove from heat and let the chutney cool slightly before transferring it to sterilized jars.
- Seal the jars and store in a cool, dark place. Allow the flavors to mature for at least a week before using.
Additional Notes
For a spicier chutney, increase the amount of chili flakes. This chutney can be stored for up to 6 months in a cool, dark place. Once opened, keep refrigerated and use within a month.
