Ingredients

  • 500g runner beans, trimmed and sliced
  • 500g apples, peeled, cored, and chopped
  • 250g onions, finely chopped
  • 250g brown sugar
  • 500ml cider vinegar
  • 1 tablespoon mustard seeds
  • 1 tablespoon ground ginger
  • 1 teaspoon salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon chili flakes (optional)

Instructions

  1. Prepare the runner beans by trimming the ends and slicing them into small pieces.
  2. Combine the runner beans, apples, and onions in a large pot.
  3. Add the brown sugar, cider vinegar, mustard seeds, ground ginger, salt, turmeric, and chili flakes to the pot.
  4. Stir the mixture well to ensure all ingredients are evenly distributed.
  5. Bring the mixture to a boil over medium heat, stirring occasionally.
  6. Reduce the heat to low and let it simmer for about 1 hour, stirring occasionally, until the chutney thickens.
  7. Check the consistency; it should be thick and jam-like. If not, continue to simmer until desired consistency is reached.
  8. Remove from heat and let the chutney cool slightly before transferring it to sterilized jars.
  9. Seal the jars and store in a cool, dark place. Allow the flavors to mature for at least a week before using.

For a spicier chutney, increase the amount of chili flakes. This chutney can be stored for up to 6 months in a cool, dark place. Once opened, keep refrigerated and use within a month.
