- 1/4 cup soy sauce

- 1 tablespoon honey
- 1 teaspoon chili paste (adjust to taste)
- 1/4 cup chopped peanuts (for garnish)

- Fresh cilantro (for garnish)
Instructions
- Prepare the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the onion and garlic, sautéing until the onion is translucent.
- Add the red bell pepper and broccoli, cooking until they are tender-crisp.
- Stir in the cooked chicken, if using, and cook for another 2 minutes.
- Combine the peanut butter, soy sauce, lime juice, honey, and chili paste in a bowl. Mix until smooth.
- Pour the peanut sauce over the vegetables and chicken in the skillet. Stir to coat evenly.
- Add the cooked noodles to the skillet, tossing everything together until well combined and heated through.
- Garnish with chopped peanuts, green onions, and fresh cilantro before serving.
Additional Notes
For a vegetarian version, omit the chicken and add tofu or extra vegetables. Adjust the chili paste to your preferred spice level. You can also use almond butter as a substitute for peanut butter if desired.
