Sattu Parathas
Sattu Parathas are a delicious and nutritious Indian flatbread stuffed with a spiced roasted gram flour filling. Known for their earthy flavors and satisfying texture, these parathas are a staple in many North Indian households. Perfect for breakfast or a hearty lunch, they are best enjoyed with a side of yogurt or pickle.

Ingredients
- 2 cups whole wheat flour
- 1 cup sattu (roasted gram flour)
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 2 tablespoons fresh coriander leaves, chopped
- 1 teaspoon carom seeds (ajwain)
- 1 teaspoon cumin seeds
- 1 teaspoon ginger, grated
- 1 teaspoon lemon juice
- Salt to taste
- Water, as needed
- Oil or ghee for cooking
Instructions
- Prepare the dough by mixing whole wheat flour with a pinch of salt and water. Knead until smooth and pliable. Cover and set aside.
- Mix the sattu with chopped onion, green chilies, coriander leaves, carom seeds, cumin seeds, grated ginger, lemon juice, and salt. Add a little water to make a crumbly mixture.
- Divide the dough into 6 equal portions. Roll each portion into a ball.
- Flatten each dough ball slightly and place a spoonful of the sattu mixture in the center. Gather the edges to seal the filling inside.
- Roll out the filled dough ball gently into a flat circle, about 6 inches in diameter.
- Heat a tawa or skillet over medium heat. Place the rolled paratha on the hot tawa.
- Cook the paratha, applying oil or ghee on both sides, until golden brown and cooked through.
- Repeat with the remaining dough and filling.
- Serve hot with yogurt or pickle.
Additional Notes
For a spicier version, add more green chilies or a pinch of red chili powder to the filling. You can also add a tablespoon of pickle masala to the sattu mixture for an extra tangy flavor.
