Ingredients
- 3 1/2 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1 cup warm water (110°F/45°C)
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 cup pitted black olives, chopped
- 1 cup sesame seeds
- 1/4 cup honey
- 1/4 cup warm water (for honey mixture)
Instructions
- Activate the yeast by combining it with 1 cup of warm water in a small bowl. Let it sit for about 5 minutes until it becomes frothy.
- Mix the flour and salt in a large mixing bowl. Create a well in the center and add the activated yeast mixture and olive oil. Stir until a dough begins to form.
- Knead the dough on a floured surface for about 8-10 minutes until it is smooth and elastic. Incorporate the chopped black olives into the dough during the last few minutes of kneading.
- Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a damp cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Divide the risen dough into 8 equal pieces. Roll each piece into a rope about 10 inches long and form into a circle, pinching the ends together to seal.
- Prepare the honey mixture by combining honey and 1/4 cup warm water in a shallow dish. Dip each dough ring into the honey mixture, then roll in sesame seeds to coat evenly.
- Place the coated rings on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown.
- Cool the koulouri breads on a wire rack for about 10 minutes before serving.
