Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic, carrot, and potato. Cook for another 5 minutes, stirring occasionally.
- Add the shredded cabbage and caraway seeds. Cook for 5 minutes until the cabbage begins to soften.
- Pour in the broth and bring to a boil.
- Stir in the tomato paste, then reduce the heat to low. Simmer for 30 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
