Ingredients
- 1 block (14 oz) firm tofu, drained and pressed
- 2 tablespoons olive oil
- 1 tablespoon chipotle powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 2 tablespoons lime juice
- 2 tablespoons fresh cilantro, chopped
Instructions
- Prepare the tofu by cutting it into 1-inch cubes.
- Heat olive oil in a large skillet over medium heat.
- Add the tofu cubes to the skillet and cook until golden brown on all sides, about 10 minutes.
- Sprinkle chipotle powder, smoked paprika, salt, and pepper over the tofu. Stir well to coat evenly.
- Add the cherry tomatoes to the skillet and cook for another 5 minutes, until they start to soften.
- Remove the skillet from heat and let it cool slightly.
- Mix the diced avocado, lime juice, and cilantro in a small bowl.
- Serve the tofu and tomato mixture topped with the avocado mixture.
Additional Notes
For a milder version, reduce the amount of chipotle powder. You can also add a dollop of sour cream or Greek yogurt to balance the heat. Serve with rice or quinoa for a complete meal.
