Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 chipotle pepper in adobo sauce, chopped
- 2 (15-ounce) cans of diced tomatoes
- 1 (15-ounce) can of black beans, drained and rinsed
- 1 (15-ounce) can of kidney beans, drained and rinsed
- 1 (15-ounce) can of pinto beans, drained and rinsed
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- Stir in the red and yellow bell peppers, and cook for another 3 minutes.
- Mix in the smoked paprika, cumin, chili powder, and oregano, and cook for 1 minute until fragrant.
- Add the chipotle pepper, diced tomatoes, black beans, kidney beans, pinto beans, and vegetable broth.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and serve with lime wedges.
Additional Notes
For a spicier chili, add an extra chipotle pepper or a pinch of cayenne pepper. You can also substitute any of the beans with your favorite variety. Serve with crusty bread or over rice for a complete meal.
