Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 chipotle pepper in adobo sauce, chopped
  • 2 (15-ounce) cans of diced tomatoes
  • 1 (15-ounce) can of black beans, drained and rinsed
  • 1 (15-ounce) can of kidney beans, drained and rinsed
  • 1 (15-ounce) can of pinto beans, drained and rinsed
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Stir in the red and yellow bell peppers, and cook for another 3 minutes.
  4. Mix in the smoked paprika, cumin, chili powder, and oregano, and cook for 1 minute until fragrant.
  5. Add the chipotle pepper, diced tomatoes, black beans, kidney beans, pinto beans, and vegetable broth.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro and serve with lime wedges.

Additional Notes

For a spicier chili, add an extra chipotle pepper or a pinch of cayenne pepper. You can also substitute any of the beans with your favorite variety. Serve with crusty bread or over rice for a complete meal.
