- 200g mushrooms, sliced
- 1 head of chicory, chopped
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the spelt grains under cold water and set aside.
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent.
- Stir in the mushrooms and cook until they are golden brown.
- Add the chicory and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the rinsed spelt, reduce the heat to low, and cover the pot.
- Simmer for 40 minutes, or until the spelt is tender and the liquid is mostly absorbed.
