Ingredients
- 1 block (14 oz) firm tofu, drained and cubed
- 1 medium cauliflower, cut into florets
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice, for serving
Instructions
- Prepare the tofu by pressing it to remove excess moisture. Cut into cubes.
- Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the tofu cubes and cook until golden brown on all sides. Remove and set aside.
- Add the remaining tablespoon of oil to the pan. Sauté the onion until translucent.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Mix in the curry powder and cumin, stirring to coat the onions and release the spices’ aroma.
- Pour in the coconut milk and vegetable broth. Bring to a simmer.
- Add the cauliflower florets to the pan. Cover and cook for about 10 minutes, or until the cauliflower is tender.
- Return the tofu to the pan, stirring gently to combine. Season with salt and pepper to taste.
- Simmer for an additional 5 minutes to allow the flavors to meld.
- Garnish with fresh cilantro and serve hot over cooked rice.
Additional Notes
For a spicier curry, add a pinch of cayenne pepper or a chopped chili. You can substitute broccoli for cauliflower if desired. For a richer flavor, use full-fat coconut milk.
