  • 1 tablespoon grated ginger
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • 1 tablespoon vegetable oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 teaspoon chili flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  3. Add the sesame oil to the same skillet. Sauté the garlic and ginger for 1 minute until fragrant.
  4. Stir in the red bell pepper and edamame. Cook for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the tofu to the skillet. Add the soy sauce, rice vinegar, hoisin sauce, and chili flakes. Stir well to combine.
  6. Toss in the cooked noodles and green onions. Mix everything together until the noodles are well coated with the sauce.
  7. Season with salt and pepper to taste. Serve hot.
