- 1-inch piece of ginger, grated
- 4 large tomatoes, chopped
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the mustard seeds and cumin seeds, and let them sizzle for about 30 seconds.
- Sauté the chopped onion until it becomes translucent, about 5 minutes.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Add the chopped tomatoes, red chili powder, turmeric powder, and salt. Mix well.
- Cook the mixture for about 15 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
- Stir in the brown sugar and apple cider vinegar. Cook for another 5 minutes until the sugar dissolves and the chutney thickens further.
- Remove from heat and let it cool slightly before serving.
- Garnish with fresh cilantro if desired, and serve warm or at room temperature.
Additional Notes
For a spicier chutney, add more red chili powder or a chopped green chili. You can substitute apple cider vinegar with white vinegar or lemon juice for a different tang. This chutney can be stored in an airtight container in the refrigerator for up to a week.
