Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the mustard seeds and cumin seeds, and let them sizzle for about 30 seconds.
  3. Sauté the chopped onion until it becomes translucent, about 5 minutes.
  4. Stir in the garlic and ginger, cooking for another minute until fragrant.
  5. Add the chopped tomatoes, red chili powder, turmeric powder, and salt. Mix well.
  6. Cook the mixture for about 15 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
  7. Stir in the brown sugar and apple cider vinegar. Cook for another 5 minutes until the sugar dissolves and the chutney thickens further.
  8. Remove from heat and let it cool slightly before serving.
  9. Garnish with fresh cilantro if desired, and serve warm or at room temperature.

Additional Notes
