Ingredients
- 1 cup (200g) dark chocolate chips (vegan)
- 1/2 cup (120ml) full-fat coconut milk
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup (25g) cocoa powder, for coating
Instructions
- Prepare a small baking sheet by lining it with parchment paper. Set aside.
- Melt the chocolate chips in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth.
- Heat the coconut milk in a small saucepan over medium heat until it just begins to simmer. Do not let it boil.
- Combine the melted chocolate, heated coconut milk, vanilla extract, and salt in a bowl. Stir until the mixture is smooth and glossy.
- Chill the mixture in the refrigerator for about 2 hours, or until it is firm enough to scoop.
- Scoop small amounts of the mixture using a teaspoon or melon baller and roll them into balls with your hands.
- Coat each truffle in cocoa powder by rolling them in a shallow dish filled with cocoa powder until fully covered.
- Store the truffles in an airtight container in the refrigerator until ready to serve.
Additional Notes
For a different flavor, try adding a teaspoon of espresso powder to the chocolate mixture. You can also roll the truffles in chopped nuts or shredded coconut instead of cocoa powder for a unique twist.
