Ingredients

  • 1 block (14 oz) firm tofu, drained and crumbled

  • 1 teaspoon turmeric powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 medium potatoes, grated
  • 2 tablespoons vegetable oil
  • 4 tomatoes, halved
  • 1 cup mushrooms, sliced
  • 1 can (15 oz) baked beans
  • 4 slices of whole-grain bread
  • Fresh parsley for garnish

Instructions

  1. Prepare the tofu scramble by heating olive oil in a pan over medium heat. Add crumbled tofu, turmeric, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
  2. Heat vegetable oil in another pan over medium-high heat. Add grated potatoes, pressing them down to form a flat layer. Cook for 5-6 minutes on each side until crispy and golden brown. Remove and set aside.
  3. Grill the tomatoes and mushrooms in the same pan for about 5 minutes, until they are tender and slightly charred.
  4. Warm the baked beans in a small saucepan over low heat.
  5. Toast the slices of whole-grain bread until golden brown.
  6. Assemble the fry-up by arranging the tofu scramble, hash browns, grilled tomatoes, mushrooms, baked beans, and toast on a plate. Garnish with fresh parsley.

Additional Notes

For a spicier version, add a pinch of chili powder to the tofu scramble. You can substitute sweet potatoes for regular potatoes in the hash browns for a different flavor. Serve with your favorite vegan sausage for an extra hearty meal.
