Instructions
- Preheat your oven to 425°F (220°C).
- Wash the potatoes thoroughly and pat them dry.
- Slice the potatoes thinly, about 1/8 inch apart, making sure not to cut all the way through. You can place a wooden spoon on either side of the potato to prevent cutting through.
- Mix the olive oil, minced garlic, thyme, rosemary, salt, and pepper in a small bowl.
- Brush the olive oil mixture generously over the potatoes, ensuring it gets between the slices.
- Place the potatoes on a baking sheet lined with parchment paper.
