Instructions
- Prepare the jackfruit by cutting it into bite-sized pieces, removing any seeds.
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and sauté until golden brown.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Mix in the cumin, coriander, turmeric, garam masala, and red chili powder. Cook for 1-2 minutes, stirring constantly.
- Add the diced tomatoes and cook for 5 minutes, allowing the mixture to thicken.
- Stir in the jackfruit pieces, ensuring they are well coated with the spice mixture.
