Ingredients

  • 1 block (14 oz) firm tofu, drained and pressed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds, for garnish
  • 2 green onions, sliced, for garnish

Instructions

  1. Prepare the tofu by cutting it into 1-inch cubes. In a bowl, toss the tofu cubes with 2 tablespoons of soy sauce and cornstarch until evenly coated.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 8 minutes. Remove from the skillet and set aside.
  3. Add the remaining tablespoon of vegetable oil to the skillet. Stir-fry the red bell pepper, broccoli, and carrot for about 5 minutes, or until the vegetables are tender-crisp.
  4. Add the garlic and ginger to the skillet and stir-fry for another 1 minute until fragrant.
  5. Return the tofu to the skillet. In a small bowl, mix together 3 tablespoons of soy sauce, maple syrup, rice vinegar, and sesame oil. Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
  6. Cook for an additional 2 minutes, allowing the sauce to thicken slightly.
  7. Garnish with sesame seeds and sliced green onions before serving.

Additional Notes

For a gluten-free version, use tamari instead of soy sauce. Feel free to add other vegetables like snap peas or mushrooms for variety. Serve over steamed rice or noodles for a complete meal.
