Ingredients
- 12 spring roll wrappers
- 1 cup shredded cabbage
- 1 cup grated carrots
- 1/2 cup sliced bell peppers (red, yellow, or green)
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil, plus more for frying
- 1/2 cup sweet chilli sauce, for serving
Instructions
- Prepare the filling by heating 1 tablespoon of vegetable oil in a large pan over medium heat. Add the garlic and sauté for 1 minute until fragrant.
- Add the cabbage, carrots, bell peppers, and green onions to the pan. Stir-fry for 3-4 minutes until the vegetables are slightly softened.
- Stir in the soy sauce and cook for another 2 minutes. Remove from heat and let the mixture cool slightly.
- Place a spring roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the vegetable mixture onto the lower third of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides. Roll up tightly, sealing the top corner with a dab of water. Repeat with remaining wrappers and filling.
- Heat enough vegetable oil in a deep pan to cover the spring rolls. Once hot, fry the spring rolls in batches for 3-4 minutes each, until golden brown and crispy.
- Drain the spring rolls on paper towels to remove excess oil.
- Serve the spring rolls warm with sweet chilli sauce on the side for dipping.
Additional Notes
For a healthier version, you can bake the spring rolls in a preheated oven at 400°F (200°C) for 15-20 minutes, turning halfway through. Feel free to add other vegetables like mushrooms or bean sprouts for extra flavor and texture.
