Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 sweet potato, peeled and cubed
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1/4 cup slivered almonds, toasted (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper. Stir for 1 minute until the spices are fragrant.
- Stir in the carrots, red bell pepper, zucchini, and sweet potato. Cook for 5 minutes, stirring occasionally.
- Add the chickpeas, diced tomatoes, and vegetable broth. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.
- Garnish with fresh cilantro and toasted almonds before serving.
Additional Notes
For a heartier meal, serve the tagine over couscous or quinoa. You can also add other vegetables like eggplant or green beans for variety. Adjust the cayenne pepper to your preferred level of spiciness.
