  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the red bell pepper, zucchini, and mushrooms to the skillet. Cook for about 5 minutes, or until the vegetables are tender.
