Ingredients
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the red bell pepper, zucchini, and mushrooms to the skillet. Cook for about 5 minutes, or until the vegetables are tender.
- Stir in the smoked paprika, thyme, salt, and pepper. Cook for another 2 minutes, then remove from heat and let cool slightly.
- Roll out the puff pastry on a lightly floured surface. Place the vegetable mixture in the center of the pastry.
- Fold the pastry over the filling, sealing the edges with a fork. Brush the top with beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
- Remove from the oven and let cool for a few minutes before slicing and serving.
Additional Notes
For a vegan version, use a plant-based puff pastry and replace the egg wash with a mixture of almond milk and maple syrup. Feel free to add your favorite vegetables or spices to customize the filling to your taste.
