Whisky Marmalade is a delightful twist on the classic citrus preserve, adding a warm, rich depth with a hint of whisky. This marmalade is perfect for spreading on toast, adding to desserts, or even as a glaze for meats. The combination of sweet, tangy oranges and the smoky notes of whisky makes it a unique and sophisticated treat.

Ingredients
- 4 large oranges
- 1 lemon
- 4 cups water
- 4 cups granulated sugar
- 1/4 cup whisky
Instructions
- Prepare the fruit by washing the oranges and lemon thoroughly. Peel the oranges and lemon, removing as much of the white pith as possible. Slice the peels into thin strips.
- Chop the peeled oranges and lemon into small pieces, removing any seeds.
- Combine the chopped fruit, sliced peels, and water in a large pot. Bring to a boil over medium heat.
- Simmer the mixture for about 1 hour, or until the peels are soft and the liquid has reduced by half.
- Add the sugar to the pot, stirring until it dissolves completely. Increase the heat and bring the mixture to a rapid boil.
- Boil the marmalade for about 15-20 minutes, or until it reaches the setting point. You can test this by placing a small amount on a cold plate; if it wrinkles when pushed with a finger, it’s ready.
- Remove the pot from heat and let it cool for 5 minutes. Stir in the whisky.
- Pour the marmalade into sterilized jars, leaving a small gap at the top. Seal the jars and let them cool completely before storing.
Additional Notes
For a stronger whisky flavor, you can increase the amount to 1/3 cup. If you prefer a less sweet marmalade, reduce the sugar to 3 cups. This marmalade can be stored in a cool, dark place for up to a year.
