Ingredients

  • 4 large oranges
  • 1 lemon
  • 4 cups water
  • 4 cups granulated sugar
  • 1/4 cup whisky

Instructions

  1. Prepare the fruit by washing the oranges and lemon thoroughly. Peel the oranges and lemon, removing as much of the white pith as possible. Slice the peels into thin strips.
  2. Chop the peeled oranges and lemon into small pieces, removing any seeds.
  3. Combine the chopped fruit, sliced peels, and water in a large pot. Bring to a boil over medium heat.
  4. Simmer the mixture for about 1 hour, or until the peels are soft and the liquid has reduced by half.
  5. Add the sugar to the pot, stirring until it dissolves completely. Increase the heat and bring the mixture to a rapid boil.
  6. Boil the marmalade for about 15-20 minutes, or until it reaches the setting point. You can test this by placing a small amount on a cold plate; if it wrinkles when pushed with a finger, it’s ready.
  7. Remove the pot from heat and let it cool for 5 minutes. Stir in the whisky.
  8. Pour the marmalade into sterilized jars, leaving a small gap at the top. Seal the jars and let them cool completely before storing.

Additional Notes

For a stronger whisky flavor, you can increase the amount to 1/3 cup. If you prefer a less sweet marmalade, reduce the sugar to 3 cups. This marmalade can be stored in a cool, dark place for up to a year.
