- Juice of 1 lemon
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup diced tomatoes
- Optional: chopped onions, hard-boiled eggs, or chili peppers for garnish
Instructions
- Prepare the fava beans by draining and rinsing them under cold water.
- Heat the olive oil in a medium saucepan over medium heat.
- Add the minced garlic to the pan and sauté for about 1 minute until fragrant.
- Add the fava beans to the pan, stirring to coat them in the garlic and oil.
- Stir in the ground cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the lemon juice and continue to cook for another 5 minutes, allowing the flavors to meld.
- Remove from heat and mash the beans slightly with a fork or potato masher, leaving some whole for texture.
- Garnish with chopped parsley, diced tomatoes, and any optional toppings like onions, hard-boiled eggs, or chili peppers.
- Serve warm with pita bread or as a side dish.
Additional Notes
For a spicier version, add a pinch of cayenne pepper or chopped chili peppers. You can also substitute canned fava beans with dried ones; just soak them overnight and cook until tender before using in the recipe.
