Ingredients

  • 2 pounds green tomatoes, chopped
  • 1 large onion, finely chopped
  • 1 cup apple cider vinegar
  • 1 cup brown sugar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional for heat)

Instructions

  1. Prepare the ingredients by chopping the green tomatoes and onion, and mincing the garlic.
  2. Combine the chopped tomatoes, onion, apple cider vinegar, and brown sugar in a large pot.
  3. Add the grated ginger, minced garlic, mustard seeds, ground cumin, ground cinnamon, salt, and red pepper flakes to the pot.
  4. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  5. Reduce the heat to low and let it simmer uncovered for about 1 hour, stirring occasionally, until the chutney thickens.
  6. Cool the chutney slightly before transferring it to sterilized jars for storage.
  7. Store in the refrigerator for up to 3 months.

Additional Notes

For a sweeter chutney, increase the brown sugar to 1 1/2 cups. You can also add a chopped apple for extra sweetness and texture. If you prefer a spicier chutney, increase the red pepper flakes or add a chopped chili pepper.
