- 1 medium cauliflower, cut into florets

- 1 teaspoon cumin seeds
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cauliflower florets with 1 tablespoon of olive oil, cumin seeds, salt, and pepper. Spread them on a baking sheet.
- Roast in the oven for 25-30 minutes, or until golden and tender, turning halfway through.
- Heat the remaining olive oil in a large pot over medium heat. Add the onion and sauté until translucent.
- Add the garlic and ginger, cooking for another minute until fragrant.
- Stir in the turmeric, ground coriander, and ground cumin, cooking for 30 seconds.
- Add the red lentils, coconut milk, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Stir in the roasted cauliflower and cook for an additional 5 minutes.
- Garnish with fresh cilantro and serve with lime wedges.
Additional Notes
For a spicier version, add a chopped chili or a pinch of chili powder when sautéing the onions. You can substitute coconut milk with almond milk for a lighter version. Serve with naan or rice for a complete meal.
